1 cup soaked sundries tomatoes 3 cup water (soaked water)
1/4 cup apple cider
1/4 cup soaked dates
4 -6 dates chopped
2 tbsp lemon juice
1 tbsp tamari
1 tsp smoked paprika 1 tsp cumin
1/2 tsp salt
2 tsp dijon
1 lg garlic clove garlic 1 white onion
Navy beans 2X cans
Using a dutch oven or oven proof pot, on med-high heat, saute onions until translucent, add garlic and cook 5 more minutes.
Next using a blender add the rest of the ingredients including the sundried tomatoe soaking water , (except the chopped date pieces) and blend on high until smooth.
Add beans to salted onion and garlic and pour in sauce. Bake at 300 for 1 hour, take off lid 45 minutes in to create a thicker caramelized baked bean dish.
