Veganuary - Cashew Cheese Spread
I don't know why but i've been very hesitant to create a cashew cheese spread. Everyone talks about how easy it is to make it, but "nutritional yeast" was really intimidating me for some reason. One of my "New Year Resolutions" is to make more of my own food and purchase less processed foods. So I took the plunge and created this Cashew Cheese Spread. It really is super simple and delicious.
Soak your Cashews overnight, I accidentally soaked mine for 24 hours (I forgot I was soaking them). This didn't seem to affect the recipe at all.
I don't have a fancy food processor so I just used a "Ninja" blender, it's like a magic bullet. Here's the recipe I used, you'll want to play around with your own recipe add and remove things based on the consistency and flavour you like.
1 heaping cup of soaked Cashews (drain water)
2 tbsp Nutritional Yeast
1 tsp garlic powder
1 tbsp chili flakes
1 whole lemon (squeezed)
1/4 cup water
Bunch of pepper
