What's In The Fridge - Jackfruit Tacos!
Hi, it's Chelsea, a fitness trainer and goal setting coach with the Mandy Gill APP! I'm not very creative when it comes to cooking food for myself. I go with function over flavour most of the time. If it gives me protein, carbs, fat and fibre I'm happy. This year I wanted to try making more meals from home (one of those New Year resolutions I guess).
This brings me to Jackfruit. Jackfruit is one of those things that every Vegan / Plant-based eater has either tried, or is curious about trying. I've have a lot of different types of store bought Jackfruit and I find them overly processed. You can taste that chemical aspect of it right away.
This is the exact reason I decided to buy it canned, so I could add my own flavours and hopefully reduce some of the added sugars and chemical taste.
Jackfruit was so easy to prepare. You open the can, drain the brine, rinse, and cut the triangle hard part from the bottom and you'll start seeing the "pork" appearance.
I fried up the garlic and the onions first, then added the pulled Jackfruit with BBQ sauce. After it was done frying for about 10 minutes, I put it in the oven at 200°F for 20 minutes and it was PERFECT! I am very excited about this as it can be used in sliders and salads and anywhere that you need that texture. All in all, for someone who isn't a good cook, this was simple, delicious, and I had leftovers which were even better cold.
