What's In The Fridge? Plant - Based Basics!


Hi, it's Chelsea, a fitness trainer within the Mandy Gill APP! Let me set the scene for you, you're vegan with only a fridge of vegetables and you're days away from payday, what do you make for dinner?

We're going to make a plant-based "Bolognese" style sauce! Instead of pasta as the base, we're going to use Zucchini noodles, they're full of vitamin c, potassium, and very low in carbs and calories. 

I'm a huge fan of spiralized Zucchini "Zoodles". The best way to get the above nutrients from zucchini is to eat it raw. I actually prefer the taste of raw zoodles, they become too floppy when you cook them or heat them up. 

When I bought a spiralizer I went with a simple handheld design for two reasons. The first, it's easy to clean, the second, I'm very clumsy in the kitchen and I feel like I'll be less likely to break something that has less breakable bits.

Here's what I had available in the house:
2 cloves garlic
2 onions
1 green pepper
Bunch of mushrooms
Tomato sauce
Pinch of chilies
