Healthy Foods To Cook & Snacks To Bring Camping

Mandy setting up cooking station

What commonly comes to mind when food shopping for a camping trip is the stereotypical list of: hot dogs, hamburgers, chips, and pops or alcoholic beverages. Most people choose these foods out of habit but in reality; cooking with fresh ingredients while camping is more nutritious and can be a fun activity for you and your friends/family. Blast some music and get cookin'!

Setting up the cooking station as part of your routine really helps to keep you on track with your healthy lifestyle and avoid the common foods that are filled with sugars and additives (such as cereals or hot dogs). Once you have a taste of the clean eats, it will steer you towards some healthier, creative, and more delicious options.

Living a plant-based diet, I started my mornings off with some Mushroom Coffee and coconut oil.

A great way to fit in your vitamins are from organic vegetables. Pick some of your favourites, fry them up, and add to a salad. For us, we chose:

  • Zucchini
  • Cauliflower
  • Red Peppers
  • Yellow Peppers
  • Celery
  • Mushrooms
  • Onions
  • Sweet Potato Fries
  • Parsnips
  • Carrots
  • Spinach

With the added benefits of: Black Beans, Chickpeas, and Quinoa.
Pro-tip: Remember your favourite seasoning to sprinkle on your veggies (my choice was lemon & garlic seasoning).

We also cooked up a light spinach spiral pasta.

SNACKS

Instead of settling on potato chips, reach for the lighter choice of carrot sticks with hummus or chopped up fruits.
